Baked Feta Gnocchi
  1. In an oven dish, add your cherry tomatoes, feta, garlic cloves, a pinch of salt, pepper, chilli flakes, some freshly chopped basil and a drizzle of extra virgin olive oil.

  2. Cover with aluminium foil and bake in the oven for about 30 minutes (180C/360F).

  3. Remove the foil for the last 5 mins.

  4. Add your baked feta and tomatoes in a food processor and mix everything until creamy.

  5. In the meantime, boil your gnocchi in some salted water for the time indicated on the package or until they come to surface. Drain.

  6. Mix your boiled gnocchi with your tomatoes and feta sauce, adding your Parmigiano cheese to make it “mamma mia”!
