In a mason jar, combine the minced garlic, olive oil, spicy mustard, lemon juice, red wine vinegar, and season with salt and pepper.
Store the vinaigrette in the refrigerator for later use.
When ready to serve, pour the vinaigrette into the bottom of a salad bowl.
Place the salad on top of the vinaigrette and set it aside.
Just before serving, toss the salad to mix it with the dressing.
