Add the tofu & chickpeas to a baking tray with a drizzle of oil then bake in the oven at 200°C for about 30 minutes until golden & crisp
Meanwhile, mix the mayo, peanut butter & lime juice together in a bowl then add the cabbage & mix until coated
Mix the rest of the filling ingredients (sambal oelek, soy sauce, brown sugar, rice vinegar, sesame oil, water, cornstarch) together in a dish to make the sauce mix then, once the tofu & chickpeas are done, add the sauce mix to a pan, bring to a simmer & cook until you have a glossy sauce
Add the tofu & chickpeas then give everything a good stir to coat
Spoon the tofu mixture until flatbreads then top with slaw, sprinkle with fresh coriander & wrap up!
