Place cottage cheese in a small food processor with the cacao powder and monk fruit (or your favorite sweetener). *Be sure to use POWDERED sweetener instead of granulated, or your whipped cottage cheese could come out gritty.
Pulse for about 15-20 seconds to get it creamy, removing any clumps. You can always taste and see what more you’d like to add.
This dessert is best chilled, so I highly recommend chilling for 1-2 hours unless you're in a time crunch.
You can serve this as is, but if you want to upgrade it, you can add some crushed roasted hazelnuts or a tablespoon or two of melted chocolate.
For the melted chocolate, mix the stevia-sweetened chocolate chips with some coconut oil. Microwave for 15 seconds, stir, and microwave again for 15 seconds. Pour it over the top, then let it chill so you can break the top chocolate layer with a spoon. Enjoy!
