Tomato & Sausage Rigatoni
  1. Slice peppers and dice onions.

  2. Mince garlic.

  3. Slice sausage into pieces.

  4. In one tablespoon olive oil, sear sausage pieces until brown. Do not burn. Set aside.

  5. In the same pan, add one tablespoon olive oil sauté onions, peppers.

  6. Add garlic. Season with one teaspoon salt and black pepper. Cook 2 minutes.

  7. Add uncooked pasta, broth, diced tomatoes and tomato paste. Mix well and cover with a lid.

  8. Cook covered on medium heat (not high heat) 10-12 minutes to cook the pasta.

  9. Uncover and mix. Add heavy whipping cream, adjust the salt and chili flakes.

  10. Add spinach and mix well.

  11. Add the mozzarella pieces and Parmesan cheese. Mix.

  12. Tuck the sausage back in.

  13. Garnish with cut up cherry tomatoes and parsley.
