Preheat oven to 180c
In a large bowl mix together the blended cottage cheese and eggs. Season to your taste
Cook your sweet potato (microwave/boil) until fork tender. Cut into 1 inch discs.
Prepare your muffin tray. Add a sweet potato disc to each compartment and gently smash it with the back of a glass.
Pour over the egg mixture and add your veggies of choice
Bake for 20-25 minutes or until a toothpick comes out clean
