Sweet Potato Egg Cups
  1. Preheat oven to 180c

  2. In a large bowl mix together the blended cottage cheese and eggs. Season to your taste

  3. Cook your sweet potato (microwave/boil) until fork tender. Cut into 1 inch discs.

  4. Prepare your muffin tray. Add a sweet potato disc to each compartment and gently smash it with the back of a glass.

  5. Pour over the egg mixture and add your veggies of choice

  6. Bake for 20-25 minutes or until a toothpick comes out clean
