Zucchini Corn Casserole
  1. Parboil zucchini in salted water for 3 minutes.

  2. Drain, cool slightly, and pat dry.

  3. Beat eggs.

  4. Stir in cottage cheese, mayo, corn, peppers, and shredded cheese.

  5. Add zucchini and season with onion powder, salt, and pepper.

  6. Pour into a buttered 9x13 baking dish.

  7. Mix crushed Ritz crackers with melted butter and sprinkle over the top.

  8. Bake at 375°F for about 45 minutes.

  9. Let rest 5–10 minutes before serving.
