Parboil zucchini in salted water for 3 minutes.
Drain, cool slightly, and pat dry.
Beat eggs.
Stir in cottage cheese, mayo, corn, peppers, and shredded cheese.
Add zucchini and season with onion powder, salt, and pepper.
Pour into a buttered 9x13 baking dish.
Mix crushed Ritz crackers with melted butter and sprinkle over the top.
Bake at 375°F for about 45 minutes.
Let rest 5–10 minutes before serving.
