Lemon Meringue Pie

1 small box of lemon cook and serve pudding, mixed as directed on the box except: use ¼ cup lemon juice instead of water

2 cups water

3 egg yolks

2 tbsp. butter

½ rounded cup sugar

½ cup water (for meringue)

6 tbsp. sugar (for meringue)

1 tbsp. cornstarch

3 egg whites

Mix filling ingredients together until well blended; place in prepared crust.
Place meringue ingredients in a sauce pan. Cook until mixture boils; then let cool.
Beat together 3 egg whites until stiff.
Fold in cooled meringue mixture and beat till mixed well.
Place on filled pie making sure it goes completely to the edge to seal it.
Bake on the lowest rack at 375 F for 10-12 minutes.
