Using a large pot, add diced potatoes and diced jalapeños. Cover with water and bring to a boil
Cook until fork tender, drain, and return to pot
Add butter, sour cream, seasoning, pepper, and stir.
Next, add cheese, crumbled bacon, diced green onions, and mix until combined
When cool, use a tablespoon or cookie scoop, make into 1 inch balls
Heat oil to 375º in a medium heavy bottom pan or deep fryer
In a small bowl, whisk together buttermilk and egg
Dip/roll each ball in flour
Next, add to buttermilk mixture and then into the Panko breadcrumbs
Place in hot oil and deep fry until golden brown
