Mushroom Shawarma
  1. Mix 350g king oyster mushrooms, 1 Tbsp lemon juice, 2 Tsp agave, salt, 1 Tsp paprika, 1 Tsp cumin, 1 Tsp ground coriander, ½ Tsp dried oregano, and ¼ Tsp cinnamon well on a baking tray

  2. Put the mushroom mixture on skewers

  3. Add 200g cherry tomatoes and drizzle everything with oil

  4. Bake at 200°C for 25-30 minutes, flipping the skewers every now and then

  5. For tzatziki: mix grated and squeezed cucumber, chopped parsley and dill, minced garlic, 150g vegan yogurt, olive oil, lemon juice, salt and pepper

  6. Assemble everything in a wrap and serve
