Peel and grate the potatoes
In a pan over medium heat, add a splash of oil and pan fry the lardons and onion until golden, then set aside
Squeeze the grated potato to remove as much liquid as possible
In a bowl, combine the grated potatoes, flour, eggs, seasoning and grated nutmeg, and mix well
In a pan over medium heat, add a splash of olive oil and the butter
Once the butter is foaming, add half of the potato mixture to the pan and press it down firmly into a pancake/galette shape
Add the lardons and onions on top, then the grated cheese on top of that
Add the remaining half of the potato mixture and press down firmly into a pancake shape
Cook over medium heat for approximately 15 minutes on each side until golden and the potato is cooked through
