  1. Peel and grate the potatoes

  2. In a pan over medium heat, add a splash of oil and pan fry the lardons and onion until golden, then set aside

  3. Squeeze the grated potato to remove as much liquid as possible

  4. In a bowl, combine the grated potatoes, flour, eggs, seasoning and grated nutmeg, and mix well

  5. In a pan over medium heat, add a splash of olive oil and the butter

  6. Once the butter is foaming, add half of the potato mixture to the pan and press it down firmly into a pancake/galette shape

  7. Add the lardons and onions on top, then the grated cheese on top of that

  8. Add the remaining half of the potato mixture and press down firmly into a pancake shape

  9. Cook over medium heat for approximately 15 minutes on each side until golden and the potato is cooked through
