Sweet Potato Cake
  1. Preheat the oven to 200°C (392°F). Line or lightly grease a baking tray or cake pan.

  2. In a large mixing bowl, combine the mashed sweet potato, olive oil, eggs, vanilla extract, and maple syrup. Mix until smooth and fully incorporated.

  3. Add the almond and oat flour blend, almond flour, baking soda, baking powder, and sea salt if using. Stir until fully combined and no dry spots remain.

  4. Transfer the batter to the prepared baking tray and spread evenly.

  5. Bake for approximately 35 minutes, or until the cake is set in the center and a toothpick inserted comes out mostly clean.

  6. Remove from the oven and allow to cool slightly before serving.

  7. Serve warm on its own or with vanilla ice cream if desired.
