Cheesy Chicken Parmesan Meatloaf Bake
  1. Preheat oven to 375°F (190°C). Line a loaf pan or casserole dish with parchment or lightly grease it.

  2. In a large mixing bowl, combine: ground chicken, Parmesan, mozzarella, breadcrumbs/pork rinds, eggs, onion, garlic, Italian seasoning, salt, pepper, paprika, optional parsley. Mix gently with your hands until just combined — do not over-mix, or the meatloaf may become dense.

  3. Transfer the mixture into a loaf pan or shape it by hand on a baking sheet. Bake uncovered for 45 minutes.

  4. Remove from oven and spoon marinara sauce over the top. Sprinkle mozzarella (and Parmesan if desired). Return to oven and bake 15–20 more minutes, until cheese is melted and bubbling.

  5. Let the meatloaf rest for 10 minutes before slicing. Garnish with fresh basil or parsley.
