Southwest Wraps (cold Lunch Idea #2)
  1. Finely chop cooked chicken and mix in a bowl with rinsed & drained black beans, drained corn, diced tomato, finely diced onion onion, finely diced jalapeno, lime juice, and chipotle ranch (to taste)

  2. Divide between 4 containers (approximately 1 & ½ cups of filling per container)

  3. In a separate container place 2 folded burrito sized tortillas, some shredded lettuce and shredded cheese

  4. Store ingredients separately to assemble wraps fresh for best results (not soggy)

  5. Can assemble wrap directly on the lid of the container

  6. If you don't have a fridge at work, pack in an insulted lunch box with a couple of ice packs
