  1. Peel potatoes. Place the peeled potatoes in a bowl of cold water to prevent them from oxidizing and browning.

  20. Add enough boiling water to almost fully cover all the ingredients.

  21. Cover the wok with the lid and cook for 5 minutes on medium-high heat.

  22. Uncover the wok and adjust the seasoning to your liking.

  23. Cover the wok again and cook on medium heat until the potatoes have cooked through and are tender.

  24. Add the red onions, green onions, and sesame oil. Give everything a good stir to distribute.

  25. Transfer the braised pork and potatoes to a serving dish.
