  1. Melt chocolate in a bowl over a saucepan with two inches of water in on a low heat, stirring gently until melted.

  2. Mix the base ingredients (ground almonds, peanut butter, maple syrup, and optional vanilla protein powder) until smooth, then press this into moulds so they are ⅓ full.

  3. Place half a date on top of each, then top with melted chocolate and chill until set.

  4. Store in the fridge or freezer, enjoy from frozen.
