Burrito Bowl Casserole
  1. Preheat oven to 425F

  2. Cook the rice according to the package instructions, adding in the ghee or butter and rice seasoning packet before the rice. Set aside once cooked.

  3. Cut all of your veggies and sauté them until softened. Season with salt and pepper to taste. Add the juice of one lime once it's done cooking. Set aside.

  4. Assemble! Place a large baking dish inside a rimmed baking sheet. Add ½ of the veggies to the dish, then ALL of the rice, then meat, then cheese, then veggies, then the rest of the cheese!

  5. Bake at 425F for 20-30 minutes or until the cheese is nice and melty and browning. Allow it to cool for 5-10 minutes, top with your optional toppings, and enjoy!
