Greek Chicken
  1. In a bowl, mix together the yogurt, olive oil, minced garlic, oregano, salt, and freshly cracked black pepper to create the marinade.

  2. Use a fine grater or zester to remove the yellow zest from the lemon and add it to the bowl.

  3. Squeeze the juice from half of the lemon (about 1-2 tablespoons) into the mixture and stir until everything is well combined.

  4. Chop a handful of parsley, approximately ¼ bunch, and mix it into the marinade.

  5. Add the chicken pieces to a gallon-sized zip-top bag along with the marinade.

  6. Seal the bag tightly, removing as much air as possible, and massage it to ensure the chicken is evenly coated.

  7. Refrigerate the bag for 30 minutes to allow the flavors to meld.

  8. After marinating, preheat your oven to 375°F.

  9. Transfer the marinated chicken pieces to a large casserole dish (9x13).

  10. Bake the chicken uncovered in the preheated oven for 45-60 minutes, or until it is golden brown and the internal temperature reaches 165°F.
