In a large mixing bowl, whisk together flour, lemon zest, baking powder, baking soda, and salt. Add the blended Good Culture cottage cheese and egg and stir well with a spoon. Once it starts to come together, fold in blueberries.
Take ~2 tbsp dough at a time and carefully roll into balls.
Preheat air fryer, coating the basket with non-stick cooking spray.
Place balls in air fryer, trying not to overcrowd the basket. Spray with non-stick cooking spray. Air fry for 6-8 minutes at 350F.
Remove from air fryer and cool. While donuts are cooling, whisk together the ingredients for the icing.
Once donuts are cooled completely, dip them in the glaze and let set for ~10-15 minutes. Enjoy!
