Cut your tofu into fillets, separately mix the dry and wet mixes, add a few tbsp of the dry to the wet to make it scraggly.
Coat the fillet in the wet then the dry, coat twice for extra thick coating.
Air fry, bake or deep fry until golden and crispy.
Mix the sugar, water and aromatics then simmer on medium for 30 minutes, once thick remove the aromatics, add the soy sauce and vinegar then reduce again.
Brush/coat the tofu tenders with the sauce, garnish then serve with rice and veggies!
