Lemon Pepper Oyster Mushrooms

    Dry mix:

    Method:

  1. In a bowl mix the buttermilk ingredients, mix then allow to stand for 5 minutes until thickened. In a second bowl, add the dry mix and mix well.

  2. After cleaning the mushrooms with a damn clean tea towel. Add them to the wet mix and leave for 20 minutes. In the meantime heat up the oil on a high heat or if using an air fryer 200ºc

  3. When you are ready to cook. Remove the mushrooms from the buttermilk, letting any excess drip off. add to the dry mix and coat all sides. If you want that extra crispiness double dip, so back into the buttermilk then into the dry again.

  4. If frying when the oil has reached 170ºc add some of the mushrooms but do not over crowd the pan. Fry got 3-5 minutes, turning occasionally until golden and crispy. Remove with a slotted spoon then onto a paper towel to drain excess oil.

  5. If using the air fryer, grease the tray then lay the mushrooms on there but not overlapping. Spray some oil then cook for 10-12 minutes until 10-12 minutes.

  6. To make the lemon pepper sauce melt the butter in a small pan over low heat. Stir in the lemon juice, black pepper, garlic powder, and a pinch of salt. Remove from heat.

  7. Add the mushrooms to a bowl and pour over the sauce then serve up and enjoy!!
