Carol's Christmas Pudding
  1. Use a food processor to get very fine pieces of potatoes and carrots

  2. Combine all ingredients and mix well

  3. Place in 3 - 500ml jars with lids

  4. Steam, covered in kettle of water for 3 hours

  5. Whip cream until stiff peaks form

  6. Beat egg, then add butter, icing sugar, vanilla and fold in to whipping cream

  7. Serve Sauce over Pudding
