Slow Cooker Ground Beef Bourguignon Stew

  1. In a large skillet, heat a little olive oil over medium heat. Cook the ground beef for 4 to 5 minutes, breaking up the meat with a wooden spoon, until it is no longer pink. Set aside on a plate.

  2. In the same skillet, cook the mushrooms until the water has evaporated.

  3. Transfer the ground beef to the slow cooker. Add the remaining ingredients, except for the cornstarch and, if desired, parsley. Add the bacon, if desired. Season with salt and pepper, and stir.

  4. Cover and cook for 6 hours 30 minutes to 7 hours 30 minutes on low.

  5. In a bowl, dissolve the cornstarch in a little cold water. Add the dissolved cornstarch to the slow cooker. Stir. Add the parsley, if desired. Cover and cook for another 30 minutes.
