Buta No Kakuni (braised Pork Belly)
  1. Preheat oven to 280 degrees with Staub ceramic inside.

  2. Sear pork belly on all sides until golden. Remove from pan and dispose of any excess oil.

  3. Add sliced onions and deglaze the pan with sake. Add soy, mirin and brown sugar. Reduce for 5 minutes.

  4. Transfer to preheated ceramic along with dashi broth, aromatics and pork belly. Place lid and position in the middle rack of oven. Allow to braise for 2.5-3 hrs until tender.

  5. Upon serving, remove lid and broil pork belly for 3-5 minutes until caramelized.

  6. Serve on a bed of white rice, pour over a couple spoons of the braising liquid.
