Chicken Adobo
  1. Pat chicken dry and season with salt.

  2. Sear chicken in batches until browned, then set aside.

  3. Toast garlic, bay leaves, and peppercorns in pot.

  4. Add water, soy sauce, vinegar, and oyster sauce. Scrape pot bottom.

  5. Return chicken to pot, simmer for 20 minutes, flipping once.

  6. Transfer chicken to baking sheet, broil both sides until browned.

  7. Serve over rice with sauce drizzled on top.
