In a large mixing bowl combine the flour, sugar, baking powder, salt, and nutmeg. Stir until evenly mixed.
In a separate bowl whisk together the eggs, milk, melted butter, and vanilla extract until well combined.
Gradually pour the wet ingredients into the dry ingredients. Mix until a soft dough forms.
Turn the dough onto a floured surface. Knead for about 2 to 3 minutes until the dough is smooth.
Roll out the dough to about ½ inch thick. Use a donut cutter or two round cutters to cut out donut shapes. Gather scraps and re-roll as needed.
Heat oil in a deep fryer or large pot to 350°F (175°C).
Carefully add the donuts to the hot oil in batches. Fry for 1 to 2 minutes on each side until golden brown.
Use a slotted spoon to remove the donuts and place them on paper towels to drain excess oil.
In a medium bowl mix the powdered sugar, milk, and vanilla extract until smooth. Adjust the thickness of the glaze by adding more milk for a thinner consistency or more powdered sugar for a thicker glaze.
Dip the warm donuts into the glaze ensuring they are fully coated. Place them on a wire rack to let the glaze set.
Once the glaze has set, our homemade Shipley donuts are ready to enjoy.
