Little Rolls
  1. Combine the scalded milk, butter, sugar, and salt in a bowl. Let it cool.

  2. Add the dry yeast and beaten eggs to the above mixture.

  3. Mix all the ingredients for a smooth, soft dough.

  4. Knead the dough lightly on a floured surface for several minutes.

  5. Place the dough in a greased bowl, cover, and let it rise until at least double in bulk.

  6. Divide the dough into thirds.

  7. Roll each third out on the floured surface to a 9-inch circle.

  8. Brush each circle with melted butter.

  9. Cut each circle into 12-16 wedges.

  10. Roll each wedge starting with the wide end.

  11. Arrange the rolls on a greased baking sheet and brush with melted butter.

  12. Cover and let the rolls rise until almost double in size again.

  13. Bake at 400F for 10-15 minutes.

  14. Remove the rolls from the pan and brush with butter.

  15. Cool the rolls on racks.
