Mash the butter beans in a bowl until chunky but spreadable
Mix in vegan mayo, mustard, apple cider vinegar, lemon juice, nutritional yeast, nori or seaweed flakes, pickles, gherkins, spring onion, and fresh coriander
Season with salt and pepper to taste
Taste and adjust: add more lemon for brightness or more pickle for tanginess
Pile the butter bean mixture into bread of choice with avocado and lettuce
Serve immediately
