Heat oven to 160C fan.
Place the ribs on foil and baking paper, rub with sugar, paprika, mustard, salt and pepper, then bake for 90 minutes.
Increase oven to 220C fan.
Combine rib juices with barbecue sauce ingredients in a saucepan, simmer until glossy and thick.
Spoon sauce over the ribs and grill until caramelised.
Serve with remaining barbecue sauce.
