Gluten-free Bagels
  1. Preheat oven to 180c

  2. In a bowl mix together almond flour and cottage cheese until combined. If too dry, slowly add some warm water.

  3. Transfer dough to a floured surface and knead until smooth.

  4. Roll into a ball and cut into quarters.

  5. Roll each quarter into a ball and then make a hole in the middle, gently pull apart to make a bagel shape.

  6. Place them on a prepared baking tray, and brush each bagel with some egg wash. Top with seeds (optional)

  7. Bake for 25-28 minutes until golden brown
