Blueberry Protein Muffins
  1. Preheat your oven to 350 F.

  2. Mix dry ingredients together first (reserving ⅛ cup oat flour, and berries).

  3. In a separate bowl, mix together wet ingredients.

  4. Combine both bowls, and mix well.

  5. Pour berries into a separate bowl, and coat them with an extra spoonful or two of oat flour, and shake until berries are well covered).

  6. Mix berries into your muffin batter.

  7. Spoon muffins into lined muffin tins or a silicon muffin sheet.

  8. Sprinkle a pinch of coconut sugar onto each muffin before baking.

  9. Bake for about 22-25 minutes or until a toothpick comes out clean.
