Crockpot Chicken and Rice
Servings: 4-6
Cook Time: 4-6 hours
Ingredients:
Prep the base: Add chicken breasts to the bottom of the crockpot.
Mix it up: In a bowl, whisk together chicken broth, cream of chicken soup, garlic powder, onion powder, salt, pepper, and paprika. Pour over the chicken.
Cook: Cover and cook on low for 4-6 hours (or high for 2-3 hours) until the chicken is fully cooked.
Shred & add rice: Remove the chicken, shred it with two forks, then return it to the crockpot. Stir in the uncooked rice and mix well.
Final cook: Cover and cook for another 30-45 minutes on low, stirring once or twice, until the rice is tender.
Cheese & veggies: Stir in shredded cheddar cheese and frozen peas (if using). Let it sit for 5-10 minutes to melt the cheese.
