Combine eggs, cottage cheese, and all seasonings in a high-powered blender. Blend until the mixture is completely smooth.
Pour about ¼ cup of the egg mixture into each muffin cavity.
Top each cup with shredded cheese and your chosen mix-ins. Gently stir with the back of a spoon to incorporate. Add an extra sprinkle of cheese on top if desired.
Bake for 18-22 minutes or until the egg bites are set and no longer jiggly. Let them cool slightly before removing from the tray.
