Raspberry Compote

Cook raspberries, sugar, water, and salt in small saucepan over medium-low heat, mashing occasionally with potato masher, until bubbling and raspberries have broken down, 4 to 6 minutes. Off heat, stir in chia seeds and vanilla and let sit until thickened, about 10 minutes. (Compote can be refrigerated for up to 3 days, bring to room temperature and stir to recombine before serving.)
