Double Loaf
  1. Whisk the water & yeast together, add the honey or sugar and whisk again.

  2. Add the butter and milk and whisk.

  3. Add the flour and salt and mix until everything is combined, scrape the sides of the bowl and scrape the dough up into a ball.

  4. Cover and rest for 20'min, after 20 min do 5 x stretch and folds, wet your hand, reach round grab some dough and fold it over turning the bowl in between, flip the dough over and fold it half, after 20 min repeat the process and cover and rest for 60 minutes.

  5. Once ready take it out and fold it up then weigh it and split into 2, if you're finding the dough sticky just flour your hands lightly (you can also guesstimate if you wish) on a lightly floured led surface gently stretch it out slightly and roll it up.

  6. Repeat with the other piece and place in a generously buttered dish.

  7. Cover with a tea towel for 30 min.

  8. Heat your oven to 190C. Bake for 10 min then turn the oven down to 170C and bake for another 30- 33 min.

  9. Let it cool for 15 min in the dish then take out to cool on wire rack.

  10. To freeze slice as soon as cool and freeze immediately. Toast straight from frozen or defrost airtight in 2 hours for bread

  11. Room temp: Store airtight in a box or zip lock bag for maximum freshness
