Cottage Cheese Pumpkin Protein Muffins
  1. Preheat oven to 350°F and line a muffin tin with paper liners or spray with nonstick spray.

  2. Add all ingredients into a blender with the exception of the white chocolate chips: oats, pumpkin puree, eggs, cottage cheese, greek yogurt, maple syrup and vanilla bean paste or vanilla extract, pumpkin pie spice, cinnamon, baking powder, baking soda and salt.

  3. Blend until smooth and creamy, about 45-60 seconds.

  4. Fold in mini white chocolate chips.

  5. Scoop batter evenly into 12 muffin cups, filling each about ¾ full.

  6. Sprinkle with more mini white chocolate chips if desired.

  7. Bake for 26-28 minutes, or until a toothpick comes out clean.

  8. Let muffins rest in the tin for 5 minutes, then transfer to a wire rack.
