Pour 1 cup of whipping cream into a large microwave-safe glass bowl
Add 200g of dark chocolate (broken into small pieces) to the cream
Gently stir to ensure the chocolate is covered
Microwave on high for 1 minute, stopping every 20 seconds to stir with a metal spoon until chocolate and cream are completely melted and combined
Set the chocolate mixture aside to cool for a few minutes
In a separate bowl, whip the remaining 1 cup of whipping cream using a hand mixer until thickened with soft peaks
Carefully fold the whipped cream into the chocolate mixture using a folding motion (bottom to top, over and under) to keep air in the mixture
Continue folding until smooth and consistent
Pour the mousse into serving glasses
Chill in the refrigerator for at least 1-2 hours until firm
Decorate with optional toppings such as whipped cream, flaked chocolate, cocoa powder, or fresh fruit before serving
