Lemon Loaf Cake
  1. Preheat oven to 180°C (350°F). Grease and line your cake tin for an even lemon cake bake.

  2. In a bowl, whisk together flour, baking powder, and salt.

  3. Beat butter and sugar until pale, light, and fluffy for a soft, moist texture.

  4. Add eggs one at a time, mixing well after each.

  5. Stir in vanilla, fresh lemon juice, lemon zest, and oil for a bright citrus flavour.

  6. Add dry ingredients in parts, alternating with milk.

  7. Mix gently until just combined to keep the batter light and fluffy.

  8. Pour batter into tin and bake for 45–55 minutes.

  9. If the top becomes too dark, cover loosely with foil.

  10. Cake is ready when golden and a skewer comes out clean.

  11. Let the cake cool completely in the tin before adding your lemon glaze.
