Filipino Pork Adobo
  1. Thinly slice the onion and crush the garlic. Set aside.

  2. Season one side of the pork with kosher salt. In a pan over medium heat, sear pork until browned on both sides. Remove and set aside.

  3. In the same pan, sauté onions for 1 minute. Add garlic and a pinch of salt; cook for another minute.

  4. Return the pork to the pan. Deglaze with 75 ml water, scraping up the brown bits.

  5. Add vinegar, soy sauce, dark soy sauce (if using), bay leaves, black pepper, and brown sugar. Stir to combine.

  6. Cover and simmer on low heat for 45-60 minutes, or until pork is tender. Add a splash of water if sauce reduces too much or becomes too salty.

  7. Serve hot with rice. Enjoy!
