In a bowl, whisk together the dressing ingredients until smooth and pop into the fridge.
Warm the oil in a frying pan, then add the shrimp.
Sprinkle the cajun seasoning on shrimp and cook them for 3-4 minutes or until fully cooked.
In a large bowl, combine the lettuce, tomato, avocado, and shrimp.
Add in the dressing and toss the salad gently.
Serve and garnish with slices of hard-boiled eggs (cut in half).
