Cook the orzo according to package instructions.
In a large bowl, combine the cooked orzo, garlic, sun-dried tomatoes, sun-dried tomato oil, boursin cheese, vegetable stock, spinach, smoked white cheddar, dried basil, dried oregano, salt, and pepper.
Transfer the mixture to a baking dish and bake at 375°F for 20-25 minutes, or until the cheese is melted and bubbly.
