Chicken Shawarma
  1. Combine the chicken thighs, yoghurt, garlic, coriander powder, cumin powder, cardamom powder, white vinegar, red chili powder, onion powder, smoked paprika, lemon juice, olive oil, salt and black pepper in a bowl. Mix well and marinate for at least 30 minutes, or up to 24 hours.

  2. To make the yoghurt sauce, mix the plain yoghurt, grated and salted cucumber, garlic, cilantro, coriander seed and cumin seed in a bowl. Refrigerate until ready to serve.

  3. Serve the marinated chicken with the yoghurt sauce, flatbreads, red onion, tomato, crunchy lettuce, and any other desired toppings or sauces.
