  1. Mix bread flour, water, milk, sugar, instant dry yeast, honey, 70g butter, and salt to make croissant dough

  2. Perform 3 single folds on the dough

  3. Roll dough to 3mm thickness

  4. Cut dough in half

  5. Lightly spray with water and stack 2 layers together

  6. Rest in fridge for 2-4 hours

  7. Cut into 8.5 cm squares

  8. Mix softened cream cheese, sugar, sour cream, flour, vanilla extract, and egg to make cheesecake filling

  9. Combine frozen wild blueberries, sugar, lemon zest, lemon juice, cornstarch, and water to make blueberry filling

  10. Mix melted butter, flour, and sugar to make streusel

  11. Fill pastry squares with cheesecake filling and blueberry filling

  12. Sprinkle streusel on top

  13. Bake until deeply golden

  14. Whip heavy cream with crème fraîche and sugar to make crème fraîche whipped cream

  15. Top baked danishes with crème fraîche whipped cream
