Put the strawberries (or any summer berries), caster sugar and lemon juice in a saucepan over a medium-high heat and bring to a simmer, stirring constantly.
Reduce the heat to medium and simmer for 12 mins or until thickened and broken down, stirring occasionally.
Remove from the heat and leave to cool completely.
Use a stick blender to blitz until smooth, then pass through a sieve into a clean jar or sealable container and store in the fridge for up to a week.
Serve drizzled over ice cream, desserts or breakfasts.
