Preheat oven to 425°F.
Place the cauliflower florets in medium-size saucepan and cover with water. Stir in 1 tsp salt and bring to a boil over medium-high heat. Boil until tender, about 5 minutes.
Drain the cauliflower and place in a mixing bowl with the sour cream, Monterey jack cheese, breadcrumbs, and ¼ tsp pepper. Stir to combine.
Spread mixture in an 8x8-inch baking dish and bake in the preheated oven for 30 minutes or until browned on top.
