Baa-chan’s Sweet Honey BBQ Chicken Thighs with Roasted Potatoes (Ninja Foodi XL Grill)
  1. Preheat the Grill: Select Air Roast 190 °C / 375 °F and preheat for 3–4 minutes.

  2. Prepare the Chicken: Pat dry, season with salt, pepper, and garlic powder. Brush a thin layer of BBQ sauce. Insert the temperature probe into the thickest part (avoid bone). Set target temp to 74 °C / 165 °F.

  3. Prepare the Potatoes: Toss potatoes with olive oil and seasonings until coated.

  4. Start the Potatoes: Place potatoes in the basket or on the grill grate. Cook 10 minutes.

  5. Add the Chicken: After 10 min, add thighs skin-side up beside or over the potatoes. Continue Air Roast 190 °C / 375 °F until the probe reaches 74 °C / 165 °F (about 20–25 min more). Toss potatoes halfway through for even browning.

  6. Basting Schedule: Before cooking: light base coat of sauce. Mid-cook (60 °C / 140 °F): brush again. Final glaze (2–3 min before done): brush once more, raise temp to 200 °C / 390 °F to caramelise.

  7. Rest and Serve: Remove chicken and potatoes, rest chicken 5 min before serving. Glaze will set to a shiny tack while juices redistribute.
