Caramelize the onions with olive oil
Mince the garlic cloves and chop the thyme sprigs
Soak the torn bread in milk until softened
In a large bowl, combine the soaked bread, caramelized onions, garlic, thyme, balsamic vinegar, oregano, and parsley
Add the ground turkey, egg, Parmesan, salt, and pepper to the mixture
Mix until just combined and form into meatballs
Cook the meatballs in olive oil until browned
For the gravy, melt butter or heat olive oil in a pan
Whisk in the flour to create a roux
Add the remaining caramelized onion mixture and stock
Simmer until thickened and serve over the meatballs
