Baked Stuffed Peppers
  1. Start by washing the pepper and cutting off the top.

  2. Remove the stalk, creating a hole in the pepper.

  3. Crack an egg into the pepper and add your favorite toppings till you reach the top. I went with chopped tomatoes, broccoli, cheese, and basil. Best to finish always with cheese as last ingredient as that will help to keep the top in place.

  4. Drizzle with olive oil and season with salt, pepper, or your preferred spices.

  5. Place the top back on the pepper and cover the hole with half a cherry tomato.

  6. Transfer to a preheated oven and bake at 180°C for about 25 minutes or until the pepper skin is all wrinkled.

  7. Optional: leave in the oven switched off for an extra 10 minutes if you are looking for a firmer consistency.
