Preheat oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes, until golden and soft. Let cool.
In a bowl, mash roasted garlic with all ingredients listed above and set aside.
Mix together 4 oz cream cheese, 2 tbsp sour cream, ½ tsp red pepper flakes, 1 tsp Italian seasoning, ½ tsp garlic powder, ½ tsp onion powder, Salt and pepper, to taste.
Spread the garlic butter mixture generously on one side of each bread slice. On the unspread side, layer provolone, cheddar, a dollop of cream cheese mixture and a generous sprinkle of shredded mozzarella. Close up the sandwiches.
Grill in a skillet over medium heat until golden brown and crisp on both sides, and the cheese is gloriously melted.
Slice in half and serve hot. Maybe with tomato soup or a spicy marinara for dipping.
