Season the beef roast with salt, pepper, paprika, and thyme.
Heat olive oil in a Dutch oven and sear the roast on all sides until browned.
Add onions, mushrooms, and garlic around the beef.
Pour in beef broth and Worcestershire sauce.
Cover and cook in a 325°F (165°C) oven for 3–4 hours until fork-tender.
Remove the roast and slice into thick pieces.
Spoon the rich mushroom-onion gravy over the beef.
Garnish with fresh thyme and serve hot.
